Texans think differently of their barbecued meats. East Texas, which encompasses Katy, is known for smoking the carefully selected meat for long amounts of time over top of their wood of choice. So long, in fact, that the meat just falls right off the bone. When it gets to this point, they give it a rough chop. They take sauce notes from their northern relatives and traditionally choose to include a good bit of tomato in their sweet BBQ sauce.
